PRO TIP

If you want perfect pizza crust, you should let the dough rest for at least 8 hours, preferably all night.

Wheat flour with a high gluten content is the most suitable. This gives the pizza dough elasticity and prevents the dough from crumbling. I recommend Manitoba flour type 0 with 15% gluten.
