we use it in our Chocolate Festival, if you want green videos of its use go to Facebook and search for the page @chocoarteventi and you will see several videos of our event where we use this melter to melt the chocolate and then let the children temper it, the temperature is needed to make the chocolate workable otherwise it remains opaque, does not dry etc... the working temperature is 30 degrees!
